In Oct 2021, Mukunda Foods started a new venture, Nucleus Kitchens to transform the Kitchen-as-a-Service space in India. However, in less than a year, the Bengaluru chapter of Nucleus Kitchens has already onboarded over 15 prominent brands and is looking forward to opening 100 kitchens in metros and other major cities in India.

While setting a new trend in the cloud kitchen segment by minimizing the high CAPEX and OPEX, Nucleus Kitchens enables food brands to expand their cloud kitchens to a new location with a fully automated and operational kitchen with no rentals on property, no operational concerns, high consistency of cuisines, and highly scalable profits.

“When we took off with the idea of the Kitchen-as-a-Service (KAAS) segment in India, we knew that we would have a distinct advantage over our competition,” Nucleus Kitchen Co-Founder & COO Mr. Ramchander Raman says. According to him, employing fully-automated kitchen equipment from the parent company, Mukunda Foods, worked as a USP, and Nucleus Kitchens was able to get a head start in the KaaS segment in the country.

While there are many KaaS brands in the market offering kitchen shells, kitchen space with equipment, or a mixed set of kitchen, equipment, and manpower, Nucleus Kitchens, whereas offers a fully automated and operational kitchen with skilled manpower. Additionally, there are also no monthly rental, electricity, or other operating expenses.

With a full-fledged KaaS brand like Nucleus Kitchens, according to Raman, restaurant brands can focus on recipe planning, branding, marketing, and promotions to generate demand for their brands and leave the highly CAPEX-oriented kitchen, manpower planning, training, etc. to them.

"We help make a brand scale up faster. That is the only way you can make a brand grow and sustain," he says. A fully automated unit of Nucleus Kitchens can onboard over 15 brands and service their requirements. This, Raman says, can be a mix of cuisine brands of all types of cuisines - Indian to Oriental to Continental and Mediterranean.

The innovative KaaS model of Nucleus Kitchens has helped leading brands such as Auntie’s Fung's, eDabba, Bigguy’s Wingery, Biggies Burger, Maharaja Chaap, Mad Momos, Meraki, Ghost Kitchen, Miami shakes, Wakka Makka, Ching Chong, Khichdi Paradise, Badmash Biryani, Biryani Hazirho, Bhayankar Burgers and many others since its inception.

Given that Bengaluru currently has one of the largest food delivery markets in the country, Nucleus Kitchens already has 5 operational kitchens in Bengaluru and plans to scale up to 12 in the third quarter to help its partners meet the city's growing demand for delicious cuisine.

While making the idea of Nucleus Kitchens an accessible and hassle-free partnership with stakeholders a reality, the company has quite an ambitious roadmap in the KaaS business segment in India. "We are geared for about 100 KaaS locations in the next two years. The geographical expansion will be a combination of Tiers I and II cities like Hyderabad, Chennai, Kolkata, Delhi, Mumbai, Lucknow, Kanpur, and Mysore. The growing "hunger for brands" from even Tier II and III markets in the country will open up opportunities for the model.” Co-Founder & COO, Mr. Ramchander Raman concludes.
